Slow and Steady

What I’ve made this week on £7.07

Posted on: November 28, 2008

That also includes lunch and breakfast.  I have cereal and fruit for breakfast. I made carrot and lentil soup for lunch with home made bread and the evening meals this week have been chilli sardines linguine, chickpea tangine with coconut and mint cous cous, vegetarian chilli, and vegetables stirfried in honey and ginger with rice.

Recipe for Chickpea Tangine for Shaz! I’m not a measure type by nature though, sorry!

You need:

A tin of chickpeas with the water

A carrot

Half an onion

A clove of garlic

A few heads of broccoli

Dried apricot and dried fruit (it wasn’t in the original recipe, but meat tangines usually have them so I added it in.

Cous Cous (portions are usually on the pack, I used 75g per person)

Cinnamon, ginger, cayenne pepper, chilli flakes, mint and dessicated coconut

  • Heat a little oil and soften a glove of garlic and half an onion until soft and then add cinnamon, ginger, cayenne pepper and chilli flakes. Cook for another few minutes.
  • Add the carrots, broccoli and chickpeas with the water stir it around so the spices get mixed in to the food properly and cover for 15 minutes.
  • Boil up the water for the cous cous (amount should be on the packet) with the coconut. It won’t completely dissolve but that’s ok. When it is boiling pour it over the container the cous cous is in add a little sprinkle of mint. Wait 5 minutes and then fluff it up with a fork.
