I’m beginning to wonder why I do these, as I never seem to stick to them. This week, I intend to try though.

Tonight

I’ve had some fish and rice. I’m not sure if I’m going to eat again, if I do it will be sardines with pasta.

Soup… Are these 3 days looking familiar? It should do, I was supposed to have this last week, but stayed at my friends instead.

Friday will have to be some sort of fish dish, I’m thinking smoked cod chowder, or maybe a fish pie as I’ll have spare potatoes.

To make this weeks meals, I do not need to buy anything at all, I have it all in the house already. The recipes for Monday and Thursday will be from my home made cookbook so will be the meals I make for my challenge.

I may also make some sort of dessert from my cookbooks if I have the ingredients in the house.

Well last weeks meal plan was followed until Sunday when I started to have a flare up.

I ate a salmon salmon dish yesterday as I didn’t have my fish dish on Monday as planned.

This weeks meal plan is going to be very vague because I’m going to stay with a friend from tonight until probably Sunday.

So Monday to Wednesday, what I plan on doing is rubber chicken.

Rubber chicken sounds disgusting doesn’t it? Rubber chicken isn’t a recipe, it’s what you call making chicken stretch over a few days.

So using next week for example, I’m going to make roast chicken on Monday, and then on Tuesday, I’m going to use the left overs to make a chicken and pasta pie recipe I have in my home-made cook book. Wednesday will be a veggie soup made with the carcass of the chicken as stock and any leftover fresh veg in the fridge.

The only things I need to buy are potatoes, mushrooms and a bottle of white wine for the pasta pie recipe.

Has anyone else noticed how reasonable Marks and Spencers have become recently? I’m loving the 3 for £10 on fresh meat and fish. I’m going to stock up once I’ve taken the chicken out of the freezer and have some space, if the offer is still on of course, it should be as it’s supposed to be a month long. Depends if their month started on the 1st I guess.

Mince stew with rice or in a patty.

I’ve taken a pack of mince and have managed to make it into a huge pot of food by adding some lentils, black beans and carrots.

Friday

Leftover surprise.

I have a container in the freezer that has cous cous and something else which I’m not entirely sure of.

Saturday

Veggie Day.

I’m thinking of using up the pumpkin soup I have in the freezer… A quick side note, you don’t have to defrost soup before use. You can just put it in a pot and leave it to heat up… Anyway I’m thinking soup with some stirfried veggies and a bit of noodles.

On one of the forums I’m on, there is a ‘try a new recipe a week thread’. This week is paprika chicken so I’ve decided to try it out with roasted potatoes.

I have absolutely no idea what I’m going to cook this week. There is still no rice in the jar, even though I have asked my sister and my mum, who she is down stairs at this very moment. I’m going to buy some brown rice, that is the rice I normally cook with, and will using that. If they don’t like it,  it’s their business because I’ve been asking them to fill up the jar for weeks now!

Here’s my revelation

I can only change myself.

For months I’ve been trying to get my mum and sister to waste less money, and to eat healthier. They simply don’t want to do it.This weekend my mum went to the supermarket and do you know what she bought? A loaf of bread and some nuts. The rice and pasta jars are both empty, there’s no tinned tomatoes, no fresh vegetables in the house and that is the only thing she could buy?

Instead of stressing about it, and trying to make everything perfect for everyone, I’m going to just cook. If they eat it fine, if they don’t I’ll freeze it and eat it another time. There is just no point me wasting my time, money and energy on them.

Even though it doesn’t help the pain go away, I feel better when I stretch regularly. I’ve found some stretches that can be done without lying down (I don’t have the space) and so will start my daily stretching again.

5 minutes of movement everyday.

Read another investment book.

I’m going to start How to read the financial pages this week

I  find I’m spending too much time online. Rather than a curfew, I think giving myself a time limit is more realistic.

2nd Tier

Spanish Grammar.

Half an hour per day.

Go to the pool twice this week.

I’ll drop the repetitions and see if that makes a difference.

On the whole my week was OK.

There is something that I’m a bit worried about. That odd pain I had a few weeks ago, came back a few times this week. Also when I went to the pool to do my exercises, it really hurt. That doesn’t usually happen until I come out of the water. I’m going to cut back my pool exercises to the minimum amount, and cut down my driving to see if that makes a difference.

I really hope that I’m not making anything worse.

The other thing I’m thinking about doing is cutting down on the amount of cooking I do. I’m still giving this some thought, as if I don’t cook no-one else in the house will. My sister actually went to the local chip shop on Friday even though were leftovers, and eggs and cheese that she could have made an omelette with.

My meal plan, wasn’t completely accurate this week.

Monday was a bank holiday and I spent it with a friend who is an ex chef. We were supposed to have a picnic, but it rained so we ended up indoors. If you saw the amount of food  she made… It was only four of us and there was chicken, spicy codfish fritters, salad, cheese, olives, wine, rum punch, I could go on. The table looked like a buffet table, it was incredible.

Tuesday I made quorn and pasta with spinach and mushrooms. Again, no one questioned the quorn, they thought it was chicken and I’m not telling them otherwise!

Wednesday I make bologonese pasta bake. There were not chopped tomatoes in the house and so I used a can of tomato soup, and it came out really nice. I sautéed some spring onions, garlic, tomatoes and mushrooms in some olive oil and then poured the soup in a pot to reduce. I also bulked out the mince with soya mince, and no one noticed that either.

Thursday I went cinema to see Wolverine (fab movie!), and so didn’t cook as there was leftover pasta bake. I actually wasn’t very hungry and just ate some fruit in the evening.

Friday my mum and sister had their own plans, so I had the quorn meal left from Tuesday.

I really want some rice and it’s annoying me that no one is doing as I’ve asked. There is a large bag of rice in a cupboard, I cannot lift it out of the cupboard to put some rice in the rice jar.

For 2 weeks I’ve been asking my mum and sister to fill up the jar, and they still haven’t done it yet. I’m not going to buy rice when there is rice in the house, so until the jar is filled up, they’ll have to make do with pasta.

Here’s a breakdown of the goals I’ve achieved this week. I think it’s quite good considering how sore I felt after I went to the pool on Wednesday.

1st tier

In bed before midnight.

For most of the week I have been in bed before midnight. I was in a flare on Friday and was in bed for most of the day and so I  couldn’t sleep in the night. Tonight, I’m going to aim to be in bed by 2am to get me back on track for the rest of the week.

Drink water.

Most days I’ve drunk 2 litres.

Stretches.

I have stretched most days. On the days  was sore, I done basic stretches.

5 minutes of movement everyday.

I haven’t been the greatest with this. It hurts, and I’m trying to get my head around the fact I’m not making myself worse.

Read and review another investment book.

I’ve finally finished the Daily Mail book! I’ll have a review done hopefully by Tuesday.

Goals

As I said in a post yesterday, I’m going to keep the same goals until I’m doing the 1st tier consistently.

The first tier are ‘musts’ and the second tier are ‘would like tos’.

1st tier

In bed before midnight.

I have messed my sleeping pattern up and so I’m going to bed at 4/5 am and waking up late in the afternoon. I’m not working at the moment, so some would say it doesn’t matter, however I feel like I’m losing time that could be spent in the library or doing something with my day.

Drink water.

2 litres of water everyday.

Stretches.

Even though it doesn’t help the pain go away, I feel better when I stretch regularly. I’ve found some stretches that can be done without lying down (I don’t have the space) and so will start my daily stretching again.

I know that trying to walk outside is too much, so I’m going to walk on the spot, maybe even dance (!) to a 5 minute song.

I have the Daily Mail’s Saving and Investment guide from the library, I can’t believe it’s taking me so long to read this book!

I know that as I’ve paid for the month, I should keep it ans watch as many movies as I can for the month before I cancel it, but I do not want to leave it and then something crops up and I can’t cancel it.

I checked out my credit report again today, and there are lots of double entries. On the FAQs they don’t deal with that, so I’m going to ring the company and find out how they can be taken off.

My gran wanted to order something from one of those adverts in the TV magazines. I ordered them for her as she has no bank cards. It didn’t fit and so she sent it back, however they’ve opened up an account. I completely forgot they’d do a credit search.

Switch off the laptop at 9pm.

I seem to be online all the time, and a lot of the time it isn’t very productive. Switching off at 9 means that I can wind down properly, and maybe even finish reading the book I’m supposed to have finished.

As I’m on DLA higher mobility, I am exempt from car tax.

Start looking for car insurance

It runs out the end of the month, so I need to start having a look for value cover.

2nd Tier

Spanish Grammar.

Work through the book I have, just half and hour per day.

Go to the pool twice this week.

The timetable should be back to normal and I can go and do my exercises without the pool being too busy.

There seems like an awful lot in the 1st tier, but it is mostly phone calls so I’m confident that they will be done.

Personal finances.

What I’m going to do is live solely off a benefit I receive of £28 a week. This will include all food, petrol etc. I want to start saving aggressively to build back up my emergency fund.

I’m going to start reading the investment books I got out of the library staring with the Alvin Hall book. It’s a little book, so I’ll probably finish it in a day.

Meal plans

I’m going to use a lot of the leftovers that are in the freezer this week.  I’m probably going to be home alone as my sister usually stays in her friends house over the holiday.

I’m only listing the evening meals, as breakfast and lunch are pretty much the same every day. For brekkie, I usually have fruit and cereal, and for lunch it’s soup with whatever leftover veggies I have. This week it’s going to be broccoli and mushroom soup, and I’ll make a loaf for me to have bread with that.

Rice and peas with stewed beef.

I have frozen berries, apples, mandarins, and pineapple left from last week. That should do me fine until maybe the middle of the week.

The shopping list I’ll need to create this is:

Fruit and Fibre cereal for breakfast.

Wholemeal bread flour for the bread I’ll eat with my lunch.

Crackers for the porridge.

Carrots for the soup on Saturday.

Mushrooms for the stewed beef on Sunday. I’m thinking of buying the frozen ones, as they are easier to use in stews and they’ll be less wastage.

I checked on mysupermarket.com and Sainsburys has come out the cheapest this week (fruit not included yet) at £3.86. If you haven’t used my supermarket before, take a look, it’s a very handy tool.

Overall Wellbeing plans

Do my stretches everyday upon waking up.

Go to the pool to do my hydrotherapy exercises twice this week.

Pace myself, don’t try and do too many things in one day.

Work through Career Change for dummies twice this week.

Do something everyday in Spanish, even if it just listening to a song.

Use the clay and aspirin facial on my face, it was fab!
